Stir butter into mashed sweet potatoes; set aside.
Heat vegetable oil in large skillet over medium heat; add jalapeños, bell peppers, and ginger then cook 5-8 minutes until tender.
Add frozen peas, cumin, chili powder, coriander, and salt; stir until warm.
Remove from heat and incorporate cilantro and mashed sweet potatoes; set aside.
Thaw dough sheet, covered, at room temperature for 15-30 minutes, or refrigerated overnight.
Roll out dough on floured surface into a 15-inch by 12-inch rectangle.
Cut each sheet into 20, 3-inch by 3-inch squares using a chef knife.
Fill each dough square with #70 (0.5 oz) scoop of Filling then fold one corner to the opposite corner; pinch closed using 2 fingers.
Drop samosas into preheated 350°F fryer for 2-3 minutes until golden brown; drain and serve 4 pieces per portion.
Serve with your favorite dipping sauces such as cilantro crema.
For additional heat, substitute serrano peppers for jalapeños, or add 1/4 tsp cayenne pepper to Filling.
