Combine all ingredients for the marinade, except chicken, in a large stainless steel bowl and mix.
Add the chicken and massage well until all pieces are covered.
Cover with plastic wrap; place in refrigerator overnight.
Add Chex to the bowl of a food processor and grind into small pieces (or use a plastic storage bag and break pieces using bottom of a pan).
Place cereal into a full, 2-inch hotel pan and add spices; stir well.
Drain the excess marinade off of the chicken with a strainer to assure no excess dripping; place chicken in breading mixture.
Gently press the breading on all sides of chicken tenders; place on a full-size parchment-lined sheet pan. Repeat until all strips are breaded.
Serve immediately with extra buffalo sauce on the side.
