Thaw croissant dough covered, either at room temperature for 1 hour or refrigerated overnight.
Cut each croissant into 4 pieces; set aside.
Combine brown sugar, cinnamon, nutmeg, cloves and ginger in large bowl.
Add croissant pieces and toss gently to evenly coat.
Place 12 paper liners into jumbo muffin tin; coat liners with pan spray.
Add 4 croissant pieces into each muffin liner then top with 1 oz diced pineapple.
Top with 4 more croissant pieces and bake as directed until golden brown; allow to cool in pan for 5 minutes before inverting pan to remove.
