Thaw croissant dough in a single layer on a parchment-lined sheet pan, covered either at room temp. 30-60 minutes until flexible or refrigerated overnight.
Cut each croissant into 4 equal pieces.
Combine sugar and cinnamon in a large bowl; add croissant pieces and toss to coat.
Blot drained peaches with paper towels to remove excess moisture.
Place 4, sugar-coated croissant pieces in tulip liners (2 x 3 1/3-inch) in a standard muffin tin.
Add 1 oz peaches then 4 additional croissant pieces.
Bake until golden brown; allow to cool in pan 5 minutes, then remove and cool completely.
Remove paper liners from fritters and place on a wire rack.

Add powdered sugar, milk and vanilla to a mixing bowl; whisk until smooth.
Carefully drizzle over top of the cooled fritters; allow to set before serving.
When in season, swap fresh peaches for the canned peaches.
