Thaw biscuit dough, covered, either at room temperature 15-30 minutes until flexible or refrigerated overnight.
Cut each biscuit into 4 pieces, set aside.
Heat large skillet over medium heat; melt butter then add leeks.
Cook to sweat 3-5 minutes or until softened.
Add asparagus and cook 4-6 minutes, stirring often, until tender; remove from heat.
Whisk together eggs, cream, salt and pepper in a mixing bowl.
Pour 2 oz egg mixture into 12 ramekins (6-8 oz each); add 3 Tbsp (#20 scoop) Filling mixture.
Place 3 biscuit pieces on top then finish with 1 Tbsp Gruyere cheese.
Bake as directed until eggs are set and biscuit pieces are cooked through.
