Add 1 1/2 cups yogurt, cream cheese, brown sugar, pumpkin puree and pumpkin pie spice in the bowl of a food processor; process until smooth.
Stop processor and scrape down sides with a rubber spatula.
Add remaining yogurt and process until thoroughly mixed.
Portion 2 oz into containers with covers; refrigerate and serve chilled.
Thaw biscuits covered, either at room temperature 15-30 minutes until flexible or refrigerated overnight.
Cut each biscuit into quarters.
Combine sugar and cinnamon in large mixing bowl.
Lightly brush biscuits with water; toss into cinnamon sugar mixture until thoroughly coated.
Place cinnamon-sugared biscuit quarters on parchment-lined full sheet pan and spread pieces out evenly.
Lightly spray pan spray across the top of biscuits; bake until golden brown as directed below.
