Spray sheet pan or dough box with pan spray then add frozen dough ball and spray top also; cover and refrigerate overnight.
Cut the dough ball into 12 equal pieces, then roll each piece into a ball.
Transfer dough balls to a greased sheet pan or dough box and let rest, covered, for 15-20 minutes.
Cut a full sheet of parchment paper into 12 pieces; place on a sheet pan and spray with pan spray.
Roll each dough ball, on a well-greased or lightly floured surface, out to a 4-inch diameter; place onto one of the prepared parchment paper squares.
Slide 3-4 dough rounds at a time into fryer oil preheated to 350°F, including the parchment paper.
Wait a few seconds for the parchment paper square to release from the dough, then remove paper from the oil.
Fry 1-2 minutes per side until medium golden brown; remove from oil and place on cooling rack to drain.
Place chicken tenders on a parchment lined sheet pan or greased pizza screen, top each with 1 slice of provolone cheese.
Bake chicken tenders as directed until cheese is melted.

Place 1 Cheezy Chicken Tender onto each fried dough round; top with 1 Tbsp (0.5 oz) hot marinara sauce.
Sprinkle with 1 tsp of grated parmesan cheese and serve immediately.
Frittas can be used right away or packaged and frozen (without toppings) until needed.
