Thaw biscuits, covered, either at room temperature at least 2 hours, or refrigerated overnight.
Place on parchment-lined sheet pan, bake and keep warm.

*Rotate pan baked in convection oven one-half turn (180°) after 3 minutes of baking.
Add gravy mix and 1 1/2 cups water to a mixing bowl and whisk together until lumps are dissolved; set aside.
Add remaining 4 1/2 cups water to a heavy saucepan; heat to a boiling.
Whisk in dissolved gravy and resume to a boil until sauce thickens, about 2-3 minutes.
Remove from heat; stir in Cajun seasoning and Dijon mustard then keep warm.
Add vegetable oil, sausage and peppers to a large sauté pan.
Cook on medium heat 8-12 minutes until liquid is evaporated and sausage is heated through; keep warm.
Split biscuits horizontally; place bottom half of biscuit (cut side up) on serving plate.
Add 1/2 cup pepper and sausage mixture and place on remaining biscuit half.
Ladle approx. 4 oz (1/2 cup) of Cajun Gravy over biscuit and serve immediately.
