Remove plastic from frozen lemon bar sheet and run a knife along the inner edge of the cardboard liner to release the lemon bar.
Remove cardboard packaging and invert lemon bar onto a cutting board.
Remove the parchment liner on the bottom; flip lemon bar and dust powdered sugar off the top with a dry brush.
Gently place lemon bar onto a half sheet pan lined with parchment paper.
Place the thawed strawberries in a mesh strainer to drain until no liquid remains; set aside.
Combine cream cheese, sugar, lemon juice, vanilla extract, and salt in the bowl of a mixer fitted with a paddle attachment.
Mix at low speed to form a thick paste, then increase to medium speed until soft and smooth.
Stop mixer and scrape bowl and paddle with a spatula.
Switch to a whisk attachment and pour in heavy cream; mix at low speed to combine.
Stop mixer and scrape bowl; increase to high speed and whisk until the mixture can hold stiff peaks, approx. 1 to 2 minutes.
Remove mixer bowl from mixer and gently fold in drained strawberries until combined.
Spread Strawberry Cheesecake Filling over lemon bar base evenly.
Refrigerate for at least 2 hours or overnight.
Cut into 32, 3x2-inch pieces and serve cold.
Substitute strawberries for other seasonal fruits; raspberries and cherries also pair well with lemon.
