Thaw flatbread covered, either at room temperature 15-30 minutes or refrigerated overnight.
Place thawed crust on a greased pan; spread olive oil the mashed potatoes evenly over top.
Sprinkle on cheese, then chopped bacon; create 3 deep wells about 3-inches wide.
Crack eggs into wells then season with salt and pepper.
Bake as directed until eggs are fully cooked and toppings are slightly golden.
