

Pizza in a sandwich?! This take on a pesto, prosciutto and salami pizza stuffed with baby arugula and tomatoes is another easy way to extend the BONICI® dough ball into another menu item to delight your customers.

Spray sheet pan or dough box with pan spray then add frozen dough ball and spray top also; cover and refrigerate overnight.
Remove from refrigerator and let stand at room temperature 15-30 minutes.
Place dough on a lightly floured surface and dust top with flour then gently push in a circular motion to remove most of the air bubbles.
Pick up dough and stretch outwards using thumbs and index fingers; moving around edges in a circular motion until the dough fits onto the tops of your knuckles.
Stretch and turn the dough evenly until it reaches a size of 9-inch diameter. Drizzle dough with 1/2 Tbsp olive oil then sprinkle 1/4 cup mozzarella cheese on just half.
Fold dough over cheese then transfer to either a pizza screen for Impinger oven, lightly floured pizza peel or parchment-lined full sheet pan for Deck oven.
Bake as directed.

Remove from oven and brush with 1/4 tsp olive oil; open while still warm and spread 1/2 Tbsp on inside.
Layer in 1 oz each of prosciutto, salami and baby arugula; add 2 oz of tomato and serve immediately.
