Bake croissants as indicated on package; allow to cool for 1 hour.
Cut into approx. 1/2-3/4-inch cubes; set aside.
Add cream and milk to a small saucepan; bring to a simmer then pour over chopped chocolate.
Allow to stand 3 minutes and whisk until smooth.
Whisk together sugar, egg, egg yolks and vanilla in a separate bowl; slowly pour in hot chocolate cream mixture, whisking constantly so eggs do not curdle.
Stir in Irish cream liqueur then croissant pieces; allow to rest at least 10 minutes or cover and refrigerate overnight.
Spray ramekins and deposit a generous #6 scoop (5.75 oz) of mixture.
Top each with 1 1/2 Tbsp dark chocolate chips and place in 2-inch half hotel pan.
Pour boiling water into pan so it is 1-inch deep, being careful not to spill into ramekins.
Carefully place in oven and bake as directed until knife comes out clean; serve warm or cold.
