Thaw biscuit dough, covered, either at room temperature for 30 minutes or refrigerated overnight.
Tear biscuit dough into quarters and arrange evenly in generously sprayed 2-inch deep full-sized hotel pan.
Add pico de gallo, cheese, and ham over top; gently fold to ensure the toppings are evenly distributed.
Whisk eggs and milk together in a large bowl; pour over biscuits in pan.
Cover pan with greased aluminum foil and bake for half of recommended time; remove foil and finish baking until internal temperature is at least 165°F in center and top is golden brown.
