Thaw baked croissants, covered, either at room temperature 30-45 minutes or refrigerated overnight.
Stir together water and gochujang sauce in a separate bowl.
Heat vegetable oil in a sauté pan over high heat; add cabbage, carrots, and Spam.
Cook, stirring frequently, until lightly browned; add cooked ramen noodles, and gochujang mixture.
Stir fry to heat through, approx. 1-2 minutes; turn heat to low, add green onions and hold warm.
Split thawed croissant in half and brush cut sides with melted butter; place on preheated 350°F griddle to toast.
Spread 1 Tbsp mayonnaise on each of the toasted sides of the croissant bun.
